Parmesan Rainbow Rotini2014-04-07
Fairly simple pasta salad that goes well with pork or chicken. You can use store bought Italian dressing or try giving our Italian dressing recipe a try.
- 3 slices of bacon, crumbled
- ½ box rainbow rotini pasta
- ¼ cup Italian dressing
- ¼ cup bell pepper, diced
- shredded Parmesan cheese for garnish
Follow cooking directions on pasta box, but you only need to use half the water.
Cook bacon till crisp. Place on a plate with paper towels to absorb the grease and cool.
Drain pasta and transfer to a large bowl. Add Italian dressing and stir to coat. Add bell pepper and crumbled bacon. Put in the fridge until cool, about 2 hours.
Serve with shredded parmesan cheese sprinkled on top.
